For Chole Ingredients:
- 1 cup chickpeas (overnight soaked)
- 2 tea bags
- ¼ tsp baking soda
- 3 cup water at least
- 1 tsp salt
For chole cooking
- 2 tsp oil
- 1 black cardamom
- 2 pod cardamom
- 1 bay leaf
- 1 tsp cumin seeds
- 1 inch cinnamon
- ½ tsp kasuri methi
- 1 finely chopped onion
- 1 tsp ginger garlic paste
- 1 tsp chili powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- ½ tsp cumin powder
- ½ tsp garam masala
- ¼ tsp salt
- 1 tsp amchur
- 1 ½ cup tomato puree
- 2 tsp finely chopped green coriander

Crispy Bhature Recipe
Step 1: First take a big bowl, take 2 cups of maida or all purpose flour, semolina, sugar, baking soda, sugar, salt and oil. Mix thoroughly.
Step 2: Add curd, mix thoroughly, making sure that everything is well blended.
Step 3: Add more water as needed and then knead the dough. And repeat again the procedure if needed more water.
Step 4: Make a soft and smooth dough without too much pressure.
Step 5: Grease the dough with oil, cover it and allow it to rest for 2 hours.
Step 6: After 2 hours, you can knead the dough lightly.
Step 7: Make a ball-sized dough into the ball without cracks.
Step 8: Roll the ball of dough slightly thicker and then coated with oil to keep it from sticking. Drop the roll in the hot oil to make bhatura.

Step 1: First begin by using a pressure cooker to cook chana or chickpea which has been soaked in water for at least 8 hours.
Step 2: With Chana add tea bags, baking soda and 1 teaspoon salt with 3 cups of water. Cover the cooker and cook it for 5 minutes.
Step 3: Once the pressure has gone down, open the cooker and remove all teabags. keep them aside.
Step 4: In a large non-stick pan add 2 tbsp oil, bay leaf, black cardamom and pods of cardamoms, cinnamon, cumin, kasuri methi and cook on a low flame until the spices begin to turn aromatic.
Step 5: Now add the grated onion with 1 tsp ginger garlic paste, and sauté until the onions become golden brown.
Step 6: Add 1/4 tsp turmeric with chili paste, 1 tsp coriander, garam masala, amchur, and 1/4 teaspoon salt and simmer on low heat until the spices begin to smell aromatic.
Step 7: Further, add 1 1/2 cups tomato puree. Cook until the oil is separated.
Step 8: Now add the boiled chole, and combine well. Make adjustments to the consistency by adding more water, if needed.
Step 9: Cover the pot and simmer for 10 minutes or until chole is absorbed by the flavor. Cover and cook for 10 minutes.
Step 10: Finally, chole bhature is ready for you to enjoy along with onions.
