Ingredients for Paneer Masala
- ½ inch cinnamon
- ¼ tsp pepper
- 1 tsp cumin
- 2 tsp coriander seeds
- ½ tsp fennel / saunf
- 2 pods cardamom
For marination:
- 1 tsp ginger garlic paste
- 20 cubes paneer
- 1 tbsp ghee / clarified butter
- ¼ tsp turmeric
- ¼ tsp garam masala
- ½ tsp chili powder
- ¼ tsp salt
For curry:
- 1 tsp cumin
- 2 tbsp ghee / clarified butter
- 2 tbsp oil
- 1 onion
- 1 bay leaf
- ¼ tsp turmeric
- 1 tsp Kasuri methi
- 1 tsp ginger garlic paste
- 2 pods cardamom
- ½ cup curd
- 1-inch cinnamon
- 2 cloves
- 1 tsp chili powder
- ¾ tsp salt
- ¼ tsp garam masala
- 2 tbsp coriander
- 2 tomato
- ½ cup water

Steps to Make Paneer Masala
Find Out How to fry and marinate the paneer:
- in a big dish take cubes of paneer
- also add half tsp chili powder, ¼ tsp turmeric, 1 tsp ginger garlic, paste, ¼ tsp salt, and ¼ tsp garam masala.
- mix all the ingredients and marinate for half an hour.
- now heat one tbsp butter and cover paneer with it.
- Fry Paneer for a minute and keep aside.
What I did to make Dhaba style masala at home:
- in a heated pan take two tsp coriander seeds, one tsp cumin, ¼ tsp pepper, three cloves, two pods of cardamom, half tsp fennel, and half-inch cinnamon.
- Roast it on low flame until the spices turn aromatic.
- Blend the spices in the blender and turn them into powder.

How to make a paneer masala curry:
- firstly, in a deep pan take two tbsp ghee and two tbsp oil.
- add one bay leaf, two pods of cardamom, two cloves, one-inch cinnamon, and one tsp cumin.
- sauté the spices
- Add the onions and ginger-garlic paste to cooking and reduce by sauteing until they turn golden brown.
- while the flame is still low, add one tsp of the prepared spice powder, ¾ tsp of salt, and ¼ tsp of turmeric.
- saute on low flame.
- Now add two tomatoes and saute until it turns soft.
- Now add half a cup of curd on low flame.
- Keep stirring the curd until it is well combined, and separate the oil from the curd.
- Add half a cup of water for better consistency.
- Add fried paneer to the prepared sauce.
- Cover the pan on low flame until the paneer absorbs the flavors.
- add ¼ tsp garam masala, one tsp Kasuri methi, and two tbsp coriander.
