Ingredients for Sambhar Recipe.
- 2 cups water
- ½ tsp turmeric powder
- ½ cup toor dal
Tempering ingredients:
- 1 tsp mustard seeds
- 1 tbsp coconut oil / any cooking oil
- ¾ tsp urad dal
- pinch of hing
- few curry leaves
Vegetables:
- ¼ onion (cubed)
- 10 drumstick pieces
- ½ tomato (roughly chopped)
- ½ carrot (chopped)
- ½ potato (chopped)
- 7 pieces brinjal/eggplant

Other Ingredients:
- ½ lemon-sized tamarind
- ½ tsp turmeric powder
- 1 tsp jaggery or sugar
- 2 green chili (slit)
- salt to taste

Methods of making Sambhar Recipe.
There are many methods or ways to make sambar. But with this sambhar recipe and method of cooking, you can make it more restaurant-style at your home.
- Add half a cup of toor dal, two cups of water, and a pinch of turmeric to a pressure cooker. Cook for 5 whistles.
- Place the tamarind in a bowl and cover it with water.
- Prepare and chop tomato, carrot, eggplant, drumstick, and onion.
- Now, in a large Kadai take the tamarind water.
- Add a teaspoon of brown sugar or jaggery, a quarter teaspoon of salt, and a quarter teaspoon of turmeric powder to taste.
- Add all the chopped vegetables to the mixture.
- On the other hand, once the dal is cooked well grind it.
- After 10 minutes the vegetables should be soft
- Now add the mashed toor dal and bring it to boil
- Add 2 tsp of sambar powder to get a restaurant-grade sambar
- Mix the ingredients together and cook them
- Heat the following: urad dal, mustard seeds, curry leaves, and red chili pepper.
- Add the tempering to the fresh sambhar.
- Finally, sambar is ready.
Serve South Indian sambar with a side of rice, like short-grained rice. This traditional south Indian dish is best served with a dollop of ghee hot. Vegetable side dishes, such as potato fry, arbi fry, and carrot poriyal go well with this traditional dish.
